Description
Discover fresh-baked treats as we learn the secrets to sweet and savory Italian rolls. We will start with the basics of artisan dough, using pre-ferments for complex flavors. Next we will learn about Semolina, the heart of the durum wheat berry and how to work with its higher protein content. We will make a gorgeous golden roll with a velvety soft crumb and a traditional Italian flavor from the marriage of sesame with semolina. Savor another perfect complement of flavors - currant, anise and orange. We will experiment with shaping, covering everything from simple clean rounds to wheels and elegant scrolls. We'll sample all we make, so arrive hungry. Class is limited to 10 students.
