Description
This course will provide students with a working knowledge of the U.S. food system, food and nutrition policies and programs, and community nutrition program development. Students will use evidence-based nutrition epidemiology research to equip themselves to address critical issues in public health nutrition, such as: 1) the ways social, behavioral, food and nutrition factors influence the health of populations, 2) how nutrition and food policies influence health in vulnerable populations, and how to design programs to improve the nutritional status of a population. Special emphasis will be placed on nutrition programs and policies for maternal and child health, and chronic disease prevention.
